
Brief history of Spanish croquettes
This iconic dish of Spanish gastronomy is believed to have originated in France arriving in Spain during the war of independence around 1808 (Naponeolic Wars). The English troops tasted our croquettes in 1812 and seem to have been delighted. You know, you have to look after your allies!
Although at first the croquettes were a fried rice pudding dessert, as we say in Spain: Hunger sharpens wits! It was only during the Spanish Civil War (1936-1939), during the food shortage, that Spanish croquettes as we know today were born.

Chicken croquettes recipe
Although there are croquettes of almost everything, chicken croquettes are a classic in Spain, the ones all Spanish grandmothers make. Take a note!

How to prepare…
- If the chicken has skin remove it and cook in a saucepan with water and salt, once cooked and cold shred it and set aside.
- Finely chop the onion into brunoise and place in a frying pan with a drizzle of olive oil.
- When onion becomes transparent add the chicken, salt, pepper, and nutmeg, mix and leave for 3 minutes over low heat, then set aside.
- In a saucepan, melt the butter over low heat, add the flour, mix and stir for two minutes. Add the milk, salt, pepper and nutmeg and stir untill it bubbles.
- Remove the bechamel sauce from the heat and pour it into the chicken frying pan, place it over a low heat while you mix it, and when it is well mixed, correct the salt and transfer it into a bowl.
- Cover it with cling film makig sure it touches the mixture, and when it has cooled down leave it in the fridge for at least 3 hours.
- Once our croquette dough is cold, we take portions and shape them into a croquettes
- Beat the eggs and coat your croquettes in egg and breadcrumbs.
- Heat a frying pan with plenty of sunflower oil over medium heat.
- Once the oil is hot youn can start frying your croquettes!
- Place them on a plate with kitchen paper.
